The kale in this tasty green soup will give you a healthy boost – pound for pound, kale is one of the most nutrient dense foods you can find. Kale contains Vitamins A, C, and K, Folate, a B vitamin that’s key for brain development Alpha-linolenic acid, an omega-3 fatty acid. A cup serving also gives you 2.5 grams of fiber and 3 grams of protein!
- 2 Tbsp extra virgin olive oil
- 1 white onion, diced
- 1 Tbsp chopped garlic
- 1 cup diced linguica or mild chorizo sausage
- 3 cups chicken broth
- 1 ½ cups diced potato
- 2 cups shredded kale
Heat the oil in a medium sauce pan. Add the onions, garlic and sausage and cook until the onions become translucent, about 3 – 5 minutes. When the onions are clear, add the broth and potatoes. Bring to a simmer and cook until the potatoes are soft, about 15 -20 minutes. Stir in the shredded kale, season to taste with salt and pepper and serve.
For a vegan version of this soup, simply omit the sausage and use 3 cups of vegetable broth in place of the chicken broth. Looking for more color? You could add in your favorite chopped vegetables like red peppers or carrots.
